Oven Roasted Potatoes

Ingredients

  • 2 lbs potatoes 
  • 2 tbsp olive oil 
  • 3 tbsp dried herb mixture 
  • 2 tsp salt


Directions

  1. Preheat oven to roast at 425℉. 
  2. Dice potatoes into 1 inch cubes (no need to peel)
  3. Toss the potatoes in olive oil, herbs, salt and coat evenly. 
  4. Transfer to a baking sheet and roast for 30 minutes until golden brown and tender. Check for doneness and serve! 


Hasselback Potatoes

Ingredients

  • 8 medium sized potatoes 
  • 2 tbsp butter
  • ⅓ cup olive oil 
  • 4 garlic cloves 
  • 2 tsp salt

Directions

  1. Preheat oven to bake at 400℉. Grease the baking tray or line with foil/parchment paper and set aside. 
  2. With a knife, make vertical slits across the potato making sure to not cut all the way through. Set the sliced potatoes onto the baking tray. Mince the garlic. 
  3. In a bowl, mix together the olive oil, melted butter, minced garlic, and salt.
  4. Brush the mixture into the potatoes, making sure to get inside the cuts. Bake for 40 minutes. Remove from the oven and coat with the oil mixture again, bake for another 15 minutes or until edges are crispy. 
  5. Let cool and serve!  


Sauteed Potatoes

Ingredients 

  • ½ cup olive oil 
  • 3 medium potatoes 
  • ½ tsp salt + ½ tsp black pepper
  • 1 clove minced garlic

Directions

  1. Cut the potatoes into cubes and place in a pan of cold water. Boil and simmer over medium to high heat for 5 minutes and drain. Give the pan a good shake to ‘fluff’ the potatoes.
  2. In a pan, heat olive oil over medium heat and transfer potatoes to the pan. Turn the cubes over often until all sides are lightly browned. Sprinkle the salt and pepper and keep turning often until golden brown. 
  3. Remove the potatoes from the pan, add the garlic to the pan until fragrant. Add the potatoes back and mix well. 
  4. Serve with another sprinkle of salt and you're done!
