Lettuce (Lactuca Sativa) is a leafy vegetable, ranging in shape, size, and color, that is specifically grown for its leaves, and sometimes its stem. The plant is known to be eaten fresh and requires very minimal cooking and preparation. It is mainly used as a base in salads but can also be added to other dishes such as sandwiches and wraps.

Lemon Parmesan Lettuce Salad

Ingredients 

  • 1-2 hearts of romaine lettuce 
  • 2 lemons (zested and juiced)
  • ¼ cup olive oil 
  • 1 cup grated parmesan 
  • 1 tsp salt 
  • 1 tsp pepper 

Directions

  1. Chop the lettuce. Rinse, drain, and pat dry. (wrap in paper towels and refrigerate if time allows - this will help the lettuce crisp up) 
  2. Add the lettuce and lemon zest to a bowl. Season with the salt and pepper, add the olive oil and toss to combine. 
  3. Add the parmesan and combine again to coat everything evenly. Serve! 


Stir Fry Lettuce

Ingredients

  • 1 tbsp sesame oil 
  • 2 garlic cloves (minced)
  • 1 head iceberg lettuce
  • 2 tbsp soy sauce 
  • ½ tsp sugar

Directions

  1. Rip the lettuce into small 3 inch pieces. 
  2. In a large pan, heat the sesame oil on high heat, add the garlic, lettuce, soy sauce, and sugar. 
  3. Stir fry for 2-3 minutes until the lettuce is wilted but still crunchy. 
  4. Remove the excess water and drizzle with more soy sauce if desired. Serve! 


Sauteed Romaine Lettuce

Ingredients

  • 1 small head romaine lettuce 
  • 1 large garlic clove (minced)
  • 1 tbsp olive oil 
  • ¼ tsp salt 
  • ¼ tsp pepper
  • ¼ tsp lemon juice 

Directions

  1. In a large pot, bring water to a boil. Add the head of lettuce into the water stem-side first. Submerge the leaves into the water until the entire head is submerged.
  2. Blanche the lettuce for 30 seconds-1 minute. Draine the lettuce and rinse with cold water. Squeeze out as much water as possible. 
  3. Trim the stem off and chop into 2 inch long pieces. 
  4. In a pan over medium heat, add the olive oil and garlic. Saute until the garlic is fragrant. Add the lettuce and season with salt and pepper. Saute until edges are browned. 
  5. Squeeze lemon juice over the lettuce and serve!
